4 ingredient oatmeal breakfast cookies
4 ingredient soft + gooey oatmeal “breakfast” cookies.
I say breakfast cookies because pregnancy cravings are oh so real and I wanted to find a simple, quick and healthy way to have cookies in the morning that wouldn’t give me a sugar crash later.
My food philosophy is that healthy eating should be simple, quick and inexpensive.
As a holistic nutritionist and naturopathic medical student, I have a lot of people assume I live off of superfoods and that I spend a lot of money on food.
That couldn’t be further from the truth.
I believe in the medicine of eating whole foods, in their most natural state, most of the time. I also believe it’s healthy to indulge every so often.
I like my cookies on the softer side, so feel free to adjust the baking time if you’d like them more firm!
I also don’t typically follow recipes. I really like finding a few ingredients I like to cook with and adjust the portions until I find the right consistency.
This recipe is super easy to modify if you’d like to add nuts, different nut or seed butter, or dark chocolate chips if you’d like something a little sweeter.
+ 2 bananas
+ 1.5 cups of rolled oats
+ 1/8 cup of coconut oil
+ 1/8 cup of sunflower seed butter
Mash bananas first, then combine all the ingredients in one bowl.
Scoop the cookies onto a baking tray and gently flatten them with a fork for a more traditional cookie shape.
Bake for 10 minutes at 350.
This recipe makes about 10 cookies.
